GLUTEN FREE VANILLA CUPCAKES

 

YIELD: 9 CUPCAKES

INGREDIENTS:

1/4 cup unrefined sugar or honey

1/4 cup + 3 tablespoons unsweetened soy milk

1/2 cup olive oil

3 eggs*

2 teaspoons vanilla extract

1/2 cup almond flour

1/2 cup coconut flour

1/2 teaspoon baking soda

7 Vegan Egg Replacements

Frosting:

4 oz 1/3 less fat cream cheese

2 tablespoons butter*

1/3 cups confectioner sugar

*Store Bought List: Vegan Butter Substitutes Or Recipe: Homemade Vegan Butter

DIRECTIONS:

Preheat oven to 350F and line cupcake baking pan with liners.

In a bowl mix the ingredients and combine well.

Fill each liner almost to the top, they won’t rise much.

Bake for 20-22 minutes

Remove from the pan and cool on a wire rack until completely cooled.

For the frosting, mix all of the ingredients.
